A. Agar-agar powder can be used as egg-white substitute. Vegans including jains and many other asian have traditionally use it to make molded jellies (some from fruits and nut milks, but other made with sweetened beans and even corn), but these are jelled with a seaweed-derived gelatin called agar-agar (kanten in Japanese).

Using agar alone makes a kind of rubbery jell.  If you add some starch it makes a more delicate jell.
